Hello Friends!
How're y'all doin'? Me? I'm okay. Pretty good actually.
Those of you who read my last post know I'm doing Weight Watchers and that I have been doing pretty well, until this past week. Really it was the weekend that did me in.
The hubs and I took a mini vacay to Loveland to go skiing. We left Friday night and ate dinner at a yummy restaurant in Dillon called Arapahoe Cafe. I had fish for dinner. Good choice, right? The fish wasn't well flavored, but okay. I went to put it into my WW app to discover my fish was 11 points! I also had a really yummy artichoke rice pilaf. It had cream cheese in it! It was like a rice version of hot spinach and artichoke dip! Also, a ton of points! There was also a sauteed squash and carrot julienne medley on the side. Super good, and not bad on points. But Sistah was HON-GRY! So I ordered desert...Brownie Bread Pudding with Vanilla Ice Cream...it was SINFULLY good! I just entered in 30 million points into the tracker. I'm pretty sure that's an accurate point value.
Breakfast was bad, points wise, too. I had a homemade waffle with real butter and maple syrup! I also had juice AND whole milk. BAD MEREDITH! We left the hotel and hit the slopes. Ryan is turning out to be a pretty good skier. By the end of the day he could make it off the ski lift without falling! For lunch I ate a cheeseburger AND french fries. BAD MEREDITH! After lunch I decided to go for a few more runs while Ryan decided to investigate a warm beverage or two. My tale of my final run of the day will be saved for another blog.
Sunday I ate a whole box of Mac and Cheese by myself--30 points and today I ate two creme filled long johns--22 points, which I deserved for going to a hard session with the therapist, going to a nanny interview, and buying groceries in the snow.
Luckily most of my bad eating was cancelled out by the activity points I earned skiing. One day of skiing is worth 87 points! Let me tell you, my legs are feeling all 87 of them!
In conclusion, I did really well for two weeks and then I pigged out this week. I think that's okay every once in a while. I am getting back on track tomorrow. I am dreading the scale. Hopefully I maintained my weight and didn't gain much, if any, back.

Okay Madame Martinez
Hey y'all!
You don't know how much I long to hear someone say that to me out here. Coloradans aren't Yankees, but they don't speak Southern either. Several times I've said something and got a blank stare...awkward...for them. I know perfectly well how to communicate!
One of my friends, Madame Martinez, begged me to start blogging again. So here I am. You should check out her blog: martinezmayhem12.blogspot.com
Since moving to Colorado I've started doing Weight Watchers. I bought a scale after my husband and I moved into the rent house. I almost passed out when I saw the number on the dial 176! Don't tell anyone! I thought about doing SBD again, but it was too easy for me to cheat and too hard to keep track of for me. The food was yummy, but it was hard to hold myself accountable. One of my cousins recommended Weight Watchers to me over Thanksgiving. She lost 20 lbs doing it and she said that I could do the plan entirely on my I Phone! This caught my interest!
So on Tuesday, January 1, 2013, I signed up. Sister needs to be down to 145 by August so she doesn't look like a beached whale in her cousin's wedding! So far I have lost 8 lbs in 3 weeks! For those of you not familiar with Weight Watchers let me tell you a little bit about the program.
I am really getting into a habit with my meals. For breakfast I have oatmeal. For lunch I was eating either a salad with lunch meat and baby bel cheese, or just lunch meat and fruit. Yesterday I made an awesome discovery, Progresso Light Soups. Each can is only 5 points! Yesterday I tried the potato, it was divine for diet soup! Then for dinner I make a big salad and I've been experimenting with different Weight Watcher recipes. The serving sizes are small, but both the hubs and I feel full after eating the salad with our meal.
Weight Watchers has a great app online that lets you enter your own recipes into the computer and see how many points they are. Chicken soup came out real well at 4 points a bowl. Spaghetti Squash toss, not so much at 5 points a serving. So for now, I'm trying to stick with their recipes.
For exercise I either do yoga for 30+ minutes a day, or I go for a walk at Target. I have a route, and 60 minutes earns me 5 activity points! I can earn even more if I'm pushing a cart full of groceries.
I'm glad to be back and look forward to blogging again soon!

- You also get a set number of extra points for the week. Mine is 49. Weight Watchers realizes that you're not going to eat perfect everyday and they account for it with these extra points. After you go through your daily points, you start to use these.
- Exercise can earn you activity points. You get to use these points after you've used all the extra points you started the week with.

BIG Life Changes!!
No, I'm not pregnant.
As I write this it is SNOWING! That's right friends. Snowing. For those of you who keep up with Midwestern meteorology, you may have inferred that I am not watching it snow in Oklahoma. That's right! The Hubs and I have moved to Denver! LIFE CHANGE!!!
I am still not to sure about this new place. As many of you know, I don't like change. However, the opportunity for us to relocate was an extremely good one, and came at a perfect time in our lives. When we drove in last night I was really apprehensive, but after spending a good portion of today walking the area of Denver around our hotel, the city is beginning to grow on me.
We are NOT going to become Nugget fans! KD will forever reign number one in my heart. But this city is pretty cool! There is an area similar to Bricktown that we are nearby. It is an entire strip in the middle os the city set up as a downtown, open air mall. There are soooo many yummy looking places to eat that SBD (South Beach Diet) may have to sit on the back burner for a while.
This city is really pedestrian friendly. For a Saturday, the streets and sidewalks weren't too incredibly crowded. Most of today was spent searching for the basic essentials: Bank, Post Office, Drug Store, Starubucks....you know, those vital things that everyone needs to survive?
Weather update--snow has changed back to sleet.

Another life change is that I am learning to live with Anxiety. Earlier this summer my husband rushed me to the hospital because we thought I was having a heart attack. That night was one of the scariest in my entire life. I kept praying and telling my husband I loved him because I honestly thought I was going to die that night in the ER.
This summer was spent experimenting with medication, therapy and coping strategies. It even included a trip to the mental hospital. It was REALLY scary, but I am thankful for the experience. Because you see a psychiatrist everyday they are able to adjust and switch meds until you are able to function. I was REALLY thankful for Dr. Chak. He took one look at the LONG list of stuff I was on and was able to find the specific meds I needed to take.
If you ever find yourself in need of help, I would definitely recommend him and the people at Decisions Day Treatment program. I went there after the hospital. It is like going to school. They work with you to discover and work through issues that are causing you presenting symptoms. Then they work with you to learn how to function with you issue. I learned a lot.
As a result of the Anxiety, it brought around life change number 3. I decided to take the year off from teaching. Quite a bit of my anxiety came from the intense, high, unrealistic expectations I set for myself. I was putting all my time into school and neglecting myself and my husband. I have been learning how to put myself first so that Anxiety will no longer rule my life.
Because I'm not working, when the Hubs got the job offer in Denver, it was a no brainer to accept it. I am really excited (Even though I'm also Super Anxious) because I'm working really hard to meet the January 15th deadline to apply to the University of Denver Library Science Master's Program. This is something I have been wanting to do for a while, but I knew I could never juggle school, home and school. I also used to not be able to picture myself doing anything but teach full time. The Master's program is two years and set up so that I can work during the day. My plan is to find a part-time/full-time job working in a library and work and go to school at the same time!
Well, its still snowing, so I think I'll go have some Cocoa!

South Beach Reboot
So...its been awhile since I've posted. As I've told some friends lately, "I couldn't find South Beach on a map if I tried!" Needless to say, I've gone off the diet pretty bad. A combination of life events led to it.
Life Event #1: Spring Break came. When I'm out of school I tend to forget about eating until I get hungry. When I get hungry, I get cravings for foods that aren't good for me. When I get REALLY hungry, I tend to cave into those cravings.
Life Event #2: I am a teacher and over Spring Break we went to visit my family in VA. I indulged in Sweet Tea, seafood, my Grandmother's Southern cooking, Farm Fresh fried chicken, apple pie from a great restaurant in Annandale called Silverado's, and in Birthday Cake! You're supposed to eat what you want on vacation, right?
Life Event #3: My husband went on a business trip. Since I didn't have to cook, and I am a big baby about staying at home by myself I made some poor food choices. There was an order of Cheesy Bread and a Stuffed Crust Pepperoni Pizza from Little Ceasar's involved. I am such a scaredy pants when it comes to staying alone at night, so I ate most of this healthy food late in the evening. When it is just me I don't like to go out after dark, so I didn't attend Zumba or Yoga.
Life Event #4: End of the grading period frenzy! I am bad about grading papers as they come and had a huge stack of papers to grade and then put into the online grade book. Cheeto's and a venti Caramel Mocha Frappucino were my friends for the evening.
I can blame my recent weight gain and unhealthy choices on life, but in reality I decided to relinquish control over my body to my stomach. So next Monday, I will be starting the Journey to Skinny again! This week I will be making an effort to make a few healthier choices like exercising more and a eating a good breakfast. However, Phase 1 will be rebooting on April 9.

Internet at Last!
For some reason, unknown to me, my laptop doesn't want to connect to the internet at my house. So this is the first time in a while that I have been able to blog!
For those of you who have been following my journey to skinny, "Hi! How have you been? I've missed you all so much!" For those of you who have just stumbled across my blog, "Welcome!"
As many of you may remember I recently started Phase 2 of the SBD. My carb to add back in was whole wheat pasta. I like large servings when I eat so I came up with a yummy, healthy way to up my serving of pasta...Spaghetti Squash Toss. See recipe at the bottom. It is basically a mixture of pasta and spaghetti squash. On Monday, I served it to my husband underneath some chicken parmesan (for recipe see post entitled, "Half Way to Carbs" from Jan. 15). He didn't know that it wasn't straight up pasta until I told him. Which was after he cleaned his plate. Here's how to make it:
Spaghetti Squash Toss
Ingredients:
1 large spaghetti squash
1 box of whole wheat pasta (my box said that it contained 4 servings)
Water to boil the pasta
2-4 T of margarine spray (I used I Can't Believe It's Not Butter)
1/2 C grated parmesan cheese
1 C grated mozerella cheese (I used my hand to measure out the cheese: one handful parmesan and two of the mozerella. You can adjust these amounts to suit your tastes)
1 T garlic powder (again, I eyeballed it but I think this is about how much it was)
salt and pepper to taste
Directions:
1. Preheat oven to 375 degrees Farenheit. Scrub the squash and poke holes all over the outside. Put the squash, un-cut, into the oven to bake. I use a small baking pan to keep it from rolling around. The squash will need to bake for one hour.
2. While squash is baking bring a pot of water to a boil and add spaghetti. Cook according to the directions on the box. We like ours al dente. But for this recipe I stopped just before it got to al dente.
3. Drain the pasta when it is done, but leave just enough water to let the pasta soak in while the squash finishes. I didn't leave enough to cover the pasta, I left maybe 2 or 3 cups.
4. When the squash was done cut it in half and scoop out the seeds and strings in the middle. Then use a fork to shred the squash into spaghetti strands. I use a spoon to finish scraping out the last few strands.
5. Put the squash strands and drained pasta into a large bowl and add: I Can't Believe Its Not Butter Spray, garlic powder, salt, pepper, parmesan cheese and mozerella cheese. I used a pasta server to combine all of the ingredients, but you could also use your hands.
This was really yummy and it reheated well. I got about 10 servings out one box of pasta and one squash. This week I am going to up my squash to pasta ratio from one squash to two. I also am going to break the spaghetti in half before I cook it to see if this will help it to mix with the squash a little easier. This recipe did take a little over an hour to put together, but once I finished I had a pasta base that lasted me an entire week! I was also able to bake off the chicken parmesan and make a simple homemade pasta sauce while the squash baked. This recipe would be great for anyone on Phase 2 or 3 of South Beach or for anyone trying to get more vegetables into their family's diet. You could probably add extra cheese and sneak this past some kids.
I served this pasta toss with the Chicken Parmesan recipe that I posted during Phase 1. The next experiment with this mixture will probably be another family favorite around our house, Baked Spaghetti! Experiment with replacing pasta at your house with this mixture and let me know how it goes! I'm always looking for new ideas!
Before I sign off for today I have some exciting news to share. Over the past week and a half I have lost 5 pounds bringing my total weight lost up to ten pounds! For a while I wasn't sure that the diet was working, but the other day I put on a pair of pants and the felt a little loose around the thigh and derriere! I weighed myself yesterday to be sure and the scale said 155!

Phase 2 Gameplan
Hello Friends!
I am still Carb-free, but I have been doing some research on how to best add carbs back into my diet. So far the best article I have found is on about.com. According to Laura Dolson, the author of an article entitled, "How to Do Phase Two of the South Beach Diet" the idea is to add one "high nutrient, high fiber, low glycemic" carb into your diet each week. She suggests having only one serving of your new carb each day. Every week you will add back a new carb and monitor how it affects your cravings for food and how it affects your weight.
I have decided that my daily carb for this week will be whole wheat pasta. I decided to go with pasta because I can extend a portion of pasta by using spaghetti squash. I have done this before and served it to my husband without telling him what I did. When I did, he didn't notice the difference! This will be a good way to ease in some carbs. I feel like this is a safe plan and I will be less likely to undo my hard work from overeating carbs.
Next week, depending on how this change affected my weight, I'll add in some fruit.
Now, I'm off to find some yummy things to put on top of my pasta-spaghetti squash mixture!

I can really empathize with Linus from the Peanuts gang. Linus clutched to a blue blanket for security in a similar way that I am clinging to Stage 1 of the South Beach Diet. Stage 1 is safe and effective. I lost 6 pounds in one week! I haven't weighed in yet this week but I think I lost a few more. Like Linus I am unwilling to give up the known producer of successful results.
I know that I can not sustain the eating patterns of Stage 1 and that I do need carbs. However, there are so many out there to choose from! If anyone out there has any recipes or suggestions for reintroducing carbs into my diet, my ears are open!

Breakfast
=3 slices Turkey Bacon
Lunch
=6 slices chicken lunch meat
=1 cheese stick
Dinner
=2 bowls of chicken soup
Beverages
=2 cups of coffee, caffeinated
=2 cans V8
=WATER
